The classic kutya is made with wheat. We shared its recipe. However, there is also a wonderful alternative to traditional wheat kutya — rice kutya.
Rice kutya is quick to prepare and turns out to be very tasty. On the culinary YouTube channel "Tasty Recipes by Natali Cook," they explained how to make it especially delicious. The video author suggests preparing it not only with raisins but also with dried cranberries.
Ingredients:
Rice – 150 g
Water for cooking rice – 320 ml
Raisins – 75 g
Cranberries – 75 g
Poppy seeds – 35 g
Walnuts – 75 g
Honey – 4-5 tbsp.
Cooking Method:
First, soak the dried fruits in hot water and let them sit for 30 minutes. After that, drain the water and dry them with a paper towel.
Also soak the poppy seeds in boiling water and let them sit for 30 minutes. While the poppy seeds are soaking, rinse the rice under cold water about 7-8 times until the water is completely clear. Transfer it to a frying pan. Add cold water.
Bring to a boil and add a pinch of salt. Reduce the heat to the minimum, cover with a lid, and cook for 15-20 minutes without stirring.
Break or chop the walnuts into large pieces. Remove the rice from the heat and let it sit covered until ready.
Drain the water from the poppy seeds and grind them until a white milk forms. Mix all the ingredients in a bowl and drizzle with honey. Stir thoroughly.
